Discovered A Healthy Snack February 6, 2007

I was at a friends’ house recently, just hanging out watching T.V.  She offered me some edamame.  “What is edamame?  Soy beans?  I don’t think I’m interested.”

My husband and daughter tried them and said they were delicious.  I looked at the bag of frozen soybeans in their pods.  They were fully boiled.  No additional cooking required.  Just defrost.  Hmmm….

Basically, defrost the edamame.  They can be eaten plain or with a little sea salt.  Simply hold the pod between your fingers.  Pinch down to release the beans.  Discard the pods. 

Edamame is a great alternative to chips or popcorn.  They really satisfy the desire to munch without derailing the diet.
